About the Book

This iS a comprehensive useful for the students and teachers of horticulture, food technology and home science, and a handy guide for extension workers and home scale preservation for interested individuals as well. It deals with the products prepared from various fruits and vegetables, including potatoes and mushrooms, on scientific lines as well as on home scale. For the latter, matter of direct practical value has presented. Information on quality of fruits and vegetables for processing, quality control, water for fruit and vegetable processing industries, enzymes, colours, additives, flavours, plastics, browning, toxins, adulterations, etc. has also been given. Each chapter gives theoretical as well as practical information to understand the basic principles and methodology. The book contains 30 chapters in text and 16 appendices.

R.P SRIVASTAVA MSc (Ag) horticulture with specialization in fruit from Government Agricultural College, Kanpur, in 1957 and PhD from BHU,Varanasi, in 1962. He joined a horticulturist at Hill Fruit Research Station, Chaubattia, in 1962 and was incharge of horticulture research under temperate zone till 1975 before joining at CMRS, Lucknow, as a scientist (horticulture). He has the distinction of heading various important horticulture stations of the state both in hills and plains. He took over as Joint Director-Horticulture at the headquarters of Directorate during 1986 and subsequently became Additional Director and Director Of Horticulture and Fruit Processing, UP. He also worked as Dy Director-General (Horticulture) at UP Council Of Agricultural Research, Lucknow. Dr. Srivastava has written four several bulletins on different aspects and more than research papers and articles. He was recipient Of Dr Rajendra Prasad Award in i'9 On a k Fruit Nutrition written by him for the ICAR. SANJEEV KUMAR passed MSC (Ag) horticulture in 1987 and PhD with specialization in fruit technology in 1990 from ND University Of Agriculture and Technology, Faizabad. He was awarded Junior Fellowship during MSc (Ag) by ICAR and merit scholarship during PhD. Thereafter he joined as Research Associate in Post-harvest Technology (Department Of Horticulture), NDUAT, Faizabad. At present, he is working as Scientific Officer (Horticulture) at UP Council of Agricultural Research, Lucknow, and m«ing after the work of horticulture and fruit processing in the Universities as well as in the Horticulture Of UP. Dr. Kumar has vast practical experience on fruit and vegetable preservation. He has written one , several bulletins and more than 50 research papers and articles
